Poha Aloo Tikki

Ingredients
Boiled Potatoes: 2, large, roughly mashed
Onions: ½, medium, finely chopped
Green Chili: 1, finely chopped
Cilantro: 1 teaspoon, finely chopped
Poha (flattened rice): 1 cup
Salt: 1 teaspoon
Red Chili Powder: 1 teaspoon
Amchoor Powder (dried mango powder): 1 teaspoon
Chaat Masala: 1 teaspoon
Fresh Mozzarella Cheese: ¼ cup, cut into ½ inch cubes

Steps
  1. Mix the potatoes, onions, green chili, cilantro, salt, red chili powder, amchoor powder, and chaat masala in a large bowl.
  2. Soak the poha by running it through water in a sieve.
  3. Mix the poha with the potato mixture.
  4. Heat oil in a flat pan at high heat.
  5. To make a tikki, take a small amount of mixture and roll into a ball.  Flatten the ball and put a cube of mozzarella cheese in the center and fold over. 
  6. Place them in the pan and shallow fry on medium-high heat until both sides are golden brown. 
  7. Serve with coriander or mint chutney.
