Eggless Banana and Walnut Muffins

Ingredients:
3/4 cup All Purpose Flour
3 Mashed Banana
8 tbsp Sugar
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/8 tsp Salt
1/4 cup Oil
1/2 tsp Vanilla Essence
1/2 cup Walnuts, broken into medium pieces

Steps
1.  Mix the flour, salt, baking powder and baking soda and sieve this together to ensure even mixing. Keep this aside.
2.  Preheat the oven to 350 degrees F.
3.  Line a muffin pan with 12 liners.
4.  In a mixing bowl, whisk the mashed banana, sugar, oil and vanilla essence until combined.
5.  Slowly add the sifted flour to the banana mixture and gently fold the mixture until the batter shows no trace of flour. Save about a tablespoon of the flour mixture. Don't overmix.
6.  Pour batter into the prepared muffin tin.
7.  Bake for 25 minutes or till a toothpick inserted into the middle of the cake comes out clean.
8.  Allow muffins to cool before removing them from the tin.
9.  Enjoy!
